Ingredients
  

  • 1 whole large seedless watermelo
  • 1 cup Greek yogurt or coconut yogurt
  • 2 tablespoons honey or maple syrup
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh raspberries
  • 1/4 cup fresh mint leaves
  • 3 tablespoons shredded coconut
  • 3 tablespoons chopped pistachios or almonds
  • 1 tablespoon chia seeds (optional)

Method
 

  1. Start by slicing your watermelon. Cut off both ends to create stable surfaces, then slice away the rind.
  2. Cut the watermelon into round slices about 1 to 1.5 inches thick.
  3. Pat the watermelon slices gently with paper towels to remove excess moisture.
  4. Mix Greek yogurt with honey in a small bowl and spread it over each watermelon round.
  5. Decorate with berries, nuts, and other toppings as desired.
  6. Finish with a drizzle of honey, shredded coconut, mint leaves, and chia seeds if using. Slice into wedges.

Notes

Chill watermelon before slicing for better texture. Assemble just before serving for best results.
