Ingredients
  

  • 6 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red onion, thinly sliced (optional)

Method
 

  1. Cut the watermelon into bite-sized cubes and place in a large serving bowl.
  2. Crumble the feta cheese over the watermelon.
  3. Wash and chop the mint leaves, then scatter over the salad.
  4. In a small bowl, whisk together olive oil, lime juice, salt, and black pepper.
  5. Drizzle the dressing over the salad just before serving and gently toss.
  6. Garnish with reserved mint leaves and serve immediately.

Notes

Chill the watermelon beforehand for a refreshing taste. Dress the salad right before serving to avoid excess liquid.
