Ingredients
  

  • 4 medium ripe peaches, sliced
  • 8 ounces burrata cheese
  • 4 cups fresh arugula
  • 1/4 cup fresh basil leaves, tor
  • 3 tablespoons balsamic glaze
  • 2 tablespoons extra virgin olive oil
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tablespoons toasted pine nuts (optional)

Method
 

  1. Wash and dry the arugula thoroughly.
  2. Slice the peaches into wedges.
  3. Arrange the arugula on a serving platter.
  4. Scatter the peach slices over the arugula.
  5. Tear the burrata into chunks and place them around the salad.
  6. Tear fresh basil leaves and sprinkle them over the salad.
  7. Drizzle olive oil and balsamic glaze over the salad.
  8. Finish with flaky sea salt, black pepper, and toasted pine nuts if using.

Notes

Assemble the salad just before serving to maintain freshness. Choose ripe peaches for the best flavor.
