Ingredients
  

  • 1 pound pizza dough (store-bought or homemade)
  • 1 medium zucchini, sliced lengthwise
  • 1 large red bell pepper, quartered
  • 1 large yellow bell pepper, quartered
  • 1 medium red onion, sliced thick
  • 1 small eggplant, sliced into rounds
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 8 ounces fresh mozzarella, tor
  • 1/2 cup marinara or pizza sauce
  • 1/2 cup fresh basil leaves
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Method
 

  1. Preheat your grill to medium-high heat, around 400-450°F.
  2. Brush your vegetables generously with olive oil and season with salt and pepper.
  3. Grill the vegetables in batches until tender and marked.
  4. Remove the grilled vegetables and chop them into bite-sized pieces.
  5. Roll out your pizza dough on a floured surface to about 1/4-inch thick.
  6. Brush one side of the dough with garlic oil and place it oiled-side down on the grill.
  7. Cook for 2-3 minutes until firm, then flip and brush the top side with garlic oil.
  8. Spread sauce on the grilled side, add vegetables, mozzarella, and Parmesan.
  9. Close the grill lid and cook for another 3-5 minutes until cheese is melted.
  10. Remove from the grill, top with fresh basil, and let rest for 2 minutes before slicing.

Notes

Gather all ingredients before starting to ensure a smooth cooking process. Don't overload the pizza with toppings to avoid a soggy crust.
