Method
- Let your pizza dough come to room temperature for about 30 minutes.
- Preheat your grill to medium-high heat, around 450-500°F. Clean and oil the grates.
- Prepare all toppings: slice mozzarella and tomatoes, pat tomato slices dry, and mix minced garlic with two tablespoons of olive oil.
- Divide the dough into two portions and stretch each into a roughly 10-inch round.
- Brush one side of the dough with olive oil and place it on the grill, oiled side down. Cook for 2-3 minutes.
- Flip the dough, brush the grilled side with garlic oil, and add mozzarella and tomato slices. Sprinkle with salt and pepper.
- Close the grill lid and cook for another 3-4 minutes until the cheese melts and the bottom crisps up.
- Remove the pizza from the grill, scatter fresh basil leaves on top, and drizzle with remaining olive oil. Let it rest before slicing.
Notes
For best results, use fresh mozzarella and ripe summer tomatoes. Avoid overloading the pizza with toppings to ensure proper cooking.
